  • 4, (6-oz.) raw, wild skinless salmon filets

  • ¼ tsp each: salt & pepper

  • 4 cups small broccoli florets

  • 2 medium red bell peppers, cut into chunks

  • 2 small lemons, halved

  • 1 piece of fresh ginger root, about 2-inches, sliced thin

Directions:

  1. Pre-heat the oven to 425⁰F.

  4. Toss together the broccoli, red bell pepper, lemons, salt, and pepper. Transfer to sheet pan in a separate section from salmon.

  5. Sprinkle sprigs of thyme and sliced ginger over the salmon and vegetable.

  6. Place the sheet pan in the oven and cook for about 10 to 12 minutes or until the salmon reaches an internal temperature of 145⁰F. Vegetables will be slightly charred.

  7. For 1 portion, plate 1 filet of salmon, 1 cup of broccoli, and a ¼ of the red bell pepper chunks, and then squeeze 1/2 of a lemon over everything. Thyme and ginger slices can be discarded.
