Turkey Lettuce Burger with Cauliflower Chips

TOTAL TIME: 45 MINUTES 

Ingredients: 

  • 14 oz. 95-97% lean ground turkey

  • ½ tsp salt, divided

  • ¼ tsp ground black pepper

  • ¼ cup minced scallions

  • 2 wedges Swiss or cheddar spreadable cheese wedges

  • ½ cup thinly sliced tomatoes

  • 2 large lettuce leaves

  • 2 cups cauliflower rice

  • 4 tbsp reduced-fat parmesan cheese

Directions:

  1. Thoroughly combine the ground turkey with half of the salt and the black pepper and minced scallions.

  2. Shape the ground turkey mix into 2, (7-ounce) flattened patties.

  3. Place the patties onto a parchment lined sheet pan and cook in an oven at 425°F for 23 minutes (alternately air-fry them at 400°F for 18 minutes).

  4. Meanwhile, for the cauliflower chips, cook the cauliflower rice in a microwave in an open container on full power for 5 minutes.

  5. Place the cooked cauliflower into a clean kitchen towel, and squeeze out as much liquid as possible.

  6. Combine the cauliflower with the reduced-fat Parmesan cheese and remaining salt.

  7. Using the cauliflower mixture, make 12 thin, 1½ -inch wide circles (i.e., cauliflower chips) on a parchment lined sheet pan and bake in an oven at 350°F for 18 to 20 minutes until golden brown.

  8. To serve, spread a wedge of spreadable cheese onto each turkey patty and place the patty into a large lettuce leaf. Top each burger with half of the tomato slices and serve with half of the cauliflower chips per portion.
